Huevos Rancheros

If you’ve been following me for a while you know I love Mexican food! There’s a lot of things that I can’t eat if I went to a restaurant so I made my own and what’s better than breakfast for dinner? I made my own salsa to avoid anything spicy. Took a day off the gym today so I’m lowering my carbs and increasing my fat intake to offset the low carbohydrates. 3 corn tortillas, salsa, 3 eggs, cheese and avocado.
