Coconut Banana Protein Muffins

I’ve never been the best at baking but I thought I would blow up the kitchen and see what I could make with some basic ingredients. These muffins are macro and calorie friendly that make a great healthy snack when you’re on the go so give them a try!

3 Small Bananas

1/2 cup Coconut Flour

2 TBSP Margarine

3 Eggs (use egg whites instead if you want lower calorie muffins)

1/2 cup Egg Whites

2 scoops Vanilla Protein Powder (I use Optimum Nutrition’s Gold Standard Whey)

1 TSP Baking Powder

1 TSP Baking Soda

1/4 cup Stevia

Chocolate Chips (optional)

Mash the bananas, melt the margarine and combine all ingredients, mix well and pour into muffin tray.

Cook at 400° F for 13-18 minutes. Makes about 12 medium sized muffins.

93 Calories

7.5g Protein

7.5g Carbs

4g Fat
